Mom’s Pan Di Spagna

There is nothing better than your moms recipes that make you feel all of the nostalgia. Growing up, I loved being in the kitchen with my mom any chance I got. I learned all of our Italian family recipes at a young age and cannot wait to continue the traditions with my children one day.

One of my favorite things about cooking with my mom is that she has a recipe and a cookbook for just about everything. She always taught me that adding your own little twist into each recipe is what makes it even more special.

For Valentines Day this year, she made a few different treats. One of my favorites is her Pan Di Spagna. It’s buttery and moist and literally melts in your mouth.

Moms Pan Di Spagna

Prep Time: 25 Minutes

Cook Time: 40 Minutes

Total Time: 1 Hour

Ingredients

1 ¼ cups of flour

1 cup of sugar  

6 whole eggs

1 teaspoon of vanilla

Lemon zest

Pinch of salt

1 ½ teaspoon of baking powder

Directions

1. Preheat the oven to 340 degrees.

2. Add the egg whites into a mixing bowl and beat until thick.

3. In a separate bowl, add the egg yolk, sugar, salt, vanilla and lemon zest into a mixer. Combine ingredients until thick and fluffy.

4. Then, add the egg whites into the egg mixture.

5. Separately sift the flour and then add the pinch of salt and baking powder and gently fold the flour into the egg mixture.

6. Butter and flour a round baking pan  

7. Pour the cake batter into the cake pan and bake.

8. Bake at 340 for 40 minutes.

9. Check if its ready by sticking a tooth pick directly in the center of the cake. The toothpick must be completely dry when ready.

*Mom’s Tip: do not open the oven door while the cake is baking.
