Pasta Primavera

I think everybody has their own version of pasta primavera, my mom gave me her recipe, but I kind of decided to wing it and see what would happen and let me just say- there were no leftovers.

 

Prep Time: 20 Minutes Cook Time: 15 Minutes

Total Time: 45 Minutes Serving Size: 7-12 People

 

Ingredients:

  • Italian bow tie pasta

  • 3 Zucchini

  • 1 bunch of asparagus

  • One jar of peas

  • 2 tablespoons of butter

  • Salt and pepper to taste

  • 2-3 tablespoons of Olive oil

  • Two slices of prosciutto

    Directions:

  • Put a pot of water to boil for the pasta

  • Dice up all of your vegetables

  • Add the butter and oil into the pan

  • Add the asparagus first because it is takes longer to cook

  • After that, add the prosciutto and then add the rest of the vegetables

  • Let everything simmer and cook for about 5-7 minutes.

  • Add the pasta into the pot and taste to make sure it is done

  • Take a spoon and add some pasta water into the pan of vegetables and let that simmer some more

  • When the pasta is ready, transfer it to a large bowl and then add the vegetables when ready.

  • Top off with some fresh pecorino romano and enjoy!
