My Lemon Cookies
I recently made lemon cookies for Father’s Day and it was a hit! It was almost refreshing because of the lemon for this time of year. I absolutely love being in the kitchen and love making new recipes. Was the kitchen a disaster after? Yes, but it was so worth it.

Prep Time: 15 Minutes
Cook Time: 11-14 Minutes
Cool Time: 20 Minutes
Total Time: 50 Minutes
Serving Size: 30 Cookies
Ingredients:
2 ¼ cups of all purpose flour
¼ teaspoon of salt
1 teaspoon of baking powder
1 cup of sugar
1 tablespoon of lemon juice
1 large egg
2 lemons, zested
1 teaspoon of vanilla extract
¾ cup of unsalted butter, room temperature
Glaze:
2-4 tablespoons of lemon juice
1 ½ of powdered sugar
Directions:
In a mixing bowl, whisk the baking powder, salt, and flour until well combined.
Using a stand mixer or electric hand mixer, add he granulated sugar and lemon zest together until fully mixed.
Add the butter into the lemon sugar until well combined.
Slowly, add the egg, lemon juice, and vanilla extract until well combined.
Once fully mixed, put in the refrigerator to cool for 30 minutes.
In the meantime, preheat the oven to 350 degrees.
Add parchment paper to two baking sheets
Begin scooping about a tablespoon of cookie dough onto the pan.
-Bake the cookies for 11-14 minutes
Once the cookies are baked, remove the cookies from the pan and add them onto a cooling rack.
For the lemon glaze, mix 1½ cups of powdered sugar with 2-4 tablespoons until well combined. Slowly, drizzle the glaze over the cookies.
